crumble!

On Saturday I made an amazing crumble for a potluck. I don't do baking very often, so I was really happy with the outcome. I think most people who tried it had second helpings, so there was only a little bit left to bring home with me. The awesome part of this dessert is that there was no sugar added to it - it was just delicious in it's own right.


In a sauce pan, combine 1.5 lbs granny smith apples (peeled and sliced), 1 1/2 cups of backberries and the juice of 1 lemon and simmer for 5 - 10 minutes. (I added 2 chopped dates to the mix to add some extra sweetness - I think it was a good call!) Transfer the fruit to a baking dish.

Combine 1 cup of oats, 1/2 cup of flour, 5 tbsp of canola oil, 1/2 cup of sunflower seeds and 10 finely chopped dates. Pour this mixture on top of the fruit and bake for 25 minutes.  

This is based on a recipe from my aunt, who made it for Thanksgiving last year. It'll become a regular on my list, so let me be in charge of dessert next time you have a potluck - you won't be sorry ;)

  1. Well you know that I do love to throw dinner parties so you will certainly be on desert duty! It looks awsome. I may have to try that once I'm down in Wellington as I will actually have a functioning oven there and time to cook. That and it will be end of summer so all the fruit will be coming ripe and lovely.
