Easy meals

I had bought a groupon a few months ago for a local company called What's for Dinner ( check out their website here: http://www.whats4dinner.ca/).

Their idea is to take most of the prep work out of cooking. You order your meals in advance from their menu that changes monthly. You arrive, wash your hands and visit each station where you proceed to mix all the ingredients. This is the great part - diabetic? Don't add sugar. High blood pressure? Leave out the salt. You can alter the recipes to your taste. They are fresh in the store - you freeze them when you get home, so you have the opportunity to add some extras in your own kitchen before you pop them in the freezer.

Above is the prep station before I made my Spinach & Gruyere Quiche - yumm!

I can see how this is a super idea for busy people, new moms, working professionals. It took me about 50 minutes to prep 6 meals, although half of these I separated into smaller portions right there.

Here's all my meals packed and ready to go home... Balsamic Glazed Chicken, Japanese Fried Chicken, Chicken Noodle Soup, Chinese BBQ Pork Roast, Spanikopita Turkey Meatballs and the quiche... Now my freezer's stocked and ready for a busy month!

Kitchen drawer dinner

My friend Meag often refers to these "kitchen drawer dinners" - the ones where you don't go to the grocery store and make dinner exclusively from what's in the bottom drawers in the fridge. Usually this turns into a one pot dinner too. It's often the best way to go.

That's what dinner was for me tonight. And I love these, especially when they cone together like this - delicious!

Mushrooms, peppers, zucchini, asparagus, shrimp (from the freezer), diced tomatoes (added later) with wine. Add some pappardelle and a little grated hard cheese - perfection!

Not too shabby for a mid-week dinner, ya?

Tramping season begins!

This was the first hiking trip of the summer. And surprisingly, it felt like summer. This was quite the treat for April on the west coast. It was a tame trek into the Carmanah Walbran but was great as a practice run before we get to the more strenuous and longer trips that we've got planned.

Pride and Prejudice + Facebook = winning!

Ok - apologizes for the Charlie Sheen reference there. Talking about him is so last week! *sigh*

Instead, focus you're attention here: http://www.much-ado.net/austenbook/

Don't know how I'm just learning of that now, but it's pretty perfect and I felt like sharing... Enjoy!

Sweet Sweet Tofino

Back at work today after four glorious days spent up-island enjoying the slow, relaxing vibe of Tofino. And the first day back at work zapped all that goodness out of me. *sigh*

But here are a few gems from the weekend to try and recapture that feeling of rejuvenation. If you could bottle and sell the essence of Tofino I'd be a billionaire!

Why is sleep so hard to cone by this week?

Is it because things are stressful at work again?
Or maybe because daylight savings threw me for a loop?
How about those wind storms the last two nights?
Or perhaps the excitement for the Tofino getaway that is underway in less than 3 days?

Whatever it is, please let me sleep soundly throughout the night tonight and I'll be so thankful!

I'm back!

Ok - it's been a long while since I've posted, and I'd like to back into the game. I've tried to limit my computer time these past months and my blog has suffered. But now I have a new toy/weapon: an iPhone! This means I don't need to be on the computer to post. I can post on my lunch break, while I'm on the bus, or lazing in bed like I'm doing right now.

After a long absence from the gym, today will be my second class in a week (be proud of the steps you're making, even when they are small). It's a kettlebell class bases on the Russian kettlebell and doing some simple movements such as swinging it, and clean & jerks. In Victoria, this happens at BDHQ down on LoJo. Today is their 3rd birthday so all classes are FREE! Check em out at www.BDHQ.ca

Another big role I'm stepping into is the role of maid of honor for my dear friend Meag. The big day is in September so planning is well underway. Tonight we are off to an event called Inn Love (www.innlove.ca). It's all about weddings and it's happening at the Laurel Point Inn. I managed to win free tix through Bella Boudoir (www.Bellaboudoir.com), that fabulous ladies with whom I did the photoshoot my profile pic is from. I'm most excited for the company called Frocks who are over from Vancouver. They specialize in bridesmaid dresses that you will wear again - what a concept! I'll let you guys know if I find my dress tonight. :)
